What Is Coffee Off-Gassing?
When coffee beans are roasted, they undergo a dramatic transformation. The intense heat causes chemical reactions that develop the flavors and aromas we love. At the same time, the beans release gases—primarily carbon dioxide (CO₂)—trapped inside.
After roasting, beans continue to slowly release CO₂ for days. This process is known as off-gassing.
Why Waiting Matters
If you grind and brew coffee immediately after roasting, two things can happen:
Uneven Extraction – Excess CO₂ escaping from the beans can create bubbles that disrupt water flow during brewing. This means some of the flavors don’t extract properly, leaving your coffee tasting sour, bitter, or flat.
