  4. Development Stage
    After first crack, the roaster decides how far to push the roast. Longer roasting develops caramel, nutty, or chocolatey flavors.

  5. Second Crack
    Beans crack again as oils move to the surface. This stage produces bold, smoky, dark-roast flavors.
